Service Description

ServSafe® Manager Masterclass: Part A: Foundations Part A initiates our comprehensive certification series by covering the foundational principles of food safety found in the first five chapters of the curriculum. This module begins by defining foodborne illnesses, exploring their operational costs, and analyzing the critical roles of regulatory agencies like the FDA. Participants will master the FAT TOM framework to understand bacterial growth and examine the severe risks associated with biological, chemical, and physical contamination. The course provides deep insights into managing major food allergens and implementing rigorous protocols to prevent cross-contact in professional kitchens. Moving deeper into operational control, this module heavily emphasizes the necessity of strict personal hygiene programs and proper handwashing techniques. Leaders will learn exact criteria for restricting or excluding ill employees based on specific symptoms or pathogen diagnoses. The curriculum introduces the critical flow of food, teaching managers how to prevent time-temperature abuse and cross-contamination during daily operations. Participants will receive detailed instruction on selecting, calibrating, and utilizing various professional thermometers to monitor safety accurately. The final segment of Part A focuses on the crucial stages of purchasing, receiving, and storing inventory to maintain a secure supply chain. Managers will learn the strict criteria for accepting or rejecting deliveries, including proper receiving temperatures and packaging inspections. The training covers essential storage protocols, such as accurate date-marking, strict food rotation, and the hierarchical storage order required to prevent contamination. By mastering these concepts, professionals build the necessary defensive framework to protect their establishments. Enrollment in this foundational module includes digital study guides, interactive quizzes, and expert virtual instruction to maximize academic retention. This class represents only the first half of the full curriculum and must be purchased alongside its required counterpart, Part B. To ensure optimal absorption of the highly technical material, participants are required to schedule their sessions for Part A and Part B on entirely separate dates. This spaced scheduling guarantees that leaders have sufficient time to process foundational concepts before transitioning into advanced system.
