ServSafe® Manager Masterclass: Part B
Master the gold standard of food safety and leadership in this 2-day intensive.
Service Description
ServSafe® Manager Masterclass: Part B: Operations Part B completes the rigorous curriculum by focusing on chapters six through ten, which detail advanced preparation and service methodologies. Participants will master the specific minimum internal cooking temperatures required for various proteins and learn the stringent regulations surrounding partial cooking. The instruction covers the precise parameters for cooling and reheating potentially hazardous items to prevent bacterial proliferation. Furthermore, managers will analyze the critical rules for holding food safely, operating self-service areas, and executing off-site deliveries without compromising temperature control. Transitioning into macro-level management, this module provides the blueprint for building a resilient food safety culture through effective leadership and consistent training. Participants will learn how to implement Active Managerial Control to proactively identify and neutralize risks before they escalate into crises. The curriculum demystifies Hazard Analysis Critical Control Point planning, guiding leaders through the seven principles required to establish critical limits and monitoring procedures. By understanding these frameworks, managers can design customized prerequisite programs that ensure continuous operational compliance. The final chapters equip leaders with the technical expertise needed to oversee facility maintenance and sophisticated sanitation programs. The training details the criteria for selecting approved commercial equipment, preventing plumbing backflow, and responding effectively to imminent health hazards like utility outages. Managers will learn the precise chemical requirements for sanitizers and understand the critical difference between cleaning and disinfecting surfaces. This operational oversight concludes with strategies for developing master cleaning schedules and handling specialized sanitation events. This concluding module includes final exam preparation materials and your official remote proctoring voucher. Since it builds directly upon foundational theories, it must be purchased alongside Part A. Participants must schedule this session on a completely separate date from their initial training. This mandatory separation gives leaders time to master the complex content before taking the national certification exam.
